A super easy soft lemon cake recipe


This super easy lemon cake is wonderful for breakfast. It's made with simple ingredients that give it its genuine taste. Just imagine dipping it in tea or milk... yummy:-) You can make it ring-shaped or give it any other form, it will be always delicious!

You need:

- 250g (9 oz) plain yogurt
- 1 lemon zest
- a pinch of salt
- 60g (2,5tbsp) potato starch
- 100ml (3 fl oz) sunflower oil
- 180g (6 oz) plain flour
- 3 eggs
- 15g (1tbsp) baking powder
- 140g (2/3 cup) icing sugar


Combine the yogurt, eggs, oil, grated lemon zest and icing sugar


Add the flour, salt, potato starch and baking powder and stir well


Pour the mixture in a baking tray. Preheat the oven to 180C/350F and bake the cake for 50 minutes. Let it cool  before removing form the baking tray. Enjoy it:-)
